Recycling Rotisserie Chicken

I love Costco rotisserie chicken, I always have a hard time passing by this enormous rotisserie without picking up a whole chicken to take home.

There are only two of us at home, so rotisserie chicken for dinner always means leftovers the next day.  But rotisserie chicken comes so deliciously flavored that there are lots of ways to incorporate them to different dishes.

Yesterday, I made chicken salad to put into sandwiches.  Take a few pieces of chicken, shred it, put in mayonnaise, some pickle relish and add a little pepper.  I skip the salt when I make chicken salad with rotisserie chicken because they are already seasoned.

This morning my husband took out the leftover chicken and put it in arroz caldo, one of my favorite Filipino-style congee.  I've put it in chicken macaroni salad and my husband has put it in chicken chow mein.  Yesterday, I was very tempted to make hot chicken soup with it, but I had no celery or carrots in my refrigerator.

Leftovers have never been so versatile, don't you think?  I love it when you can reincorporate leftover food in next-day dishes because it means less waste and more savings.  I try to avoid throwing food away, there are so many people who are hungry in this world and I feel that we have an obligation to be sure to make good use of the food we do have.

The next time you think about throwing out that leftover dish from last night - please make sure you can't re-use or recycle it into your menu for the next day.  Waste not, want not.  Let us be thankful for the blessing we have and not throw it away!
